About Cotohi

Cattle have been closely tied to human life from ancient times, and have also appeared in various writings and anthologies of waka poems. In particular, "Cotohi" refers to special cattle, and it is a word that was also written in the Manyoshu collections in the past. Born and raised in Oki island in Shimane prefecture, Oki beef is exactly modern special beef.

Due to the fusion of Orthodox Japanese cuisine produced by Saito Akio and Oki beef, we decided "Cotohi" as the restaurant name of a restaurant that proposes a new cuisine adapted to the modern lifestyle.

As a word symbolizing this project along with the name of the restaurant, it expresses a sense of specialism, accompanied by the "Oki beef born and raised in Oki island" and Japanese cuisine "Shichi Jyu Ni kou".

Menu [Dinner Course]

About cooking methods of Oki beef, you can choose how to cook Oki beef from the following three types.

Hosho-yaki : Oki beef wrapped in a Hosho paper and scalloped in ash slowly and gently.

Kuwa-yaki : This cooking method is said to be the prototype of Suki-yaki. Using a special pot excellent in heat retention, baked  with special salty-sweet sauce.

Ibushi-yaki : Add the smell of charcoal smoke to the grilled Oki beef. A flavor of smoked Oki beef goes with wine.
